Calisto Tanzi launched Parmalat in 1961 at a small creamery in Collecchio, Italy, with a vision to transform how the world consumed milk. The company pioneered ultra-high temperature (UHT) processing, creating shelf-stable milk that did not require refrigeration and could travel vast distances without spoiling. This innovation fueled rapid expansion, turning the regional brand into Europe's largest dairy group by the late 20th century before its dramatic collapse in December 2003.

The bankruptcy revealed €14 billion in hidden debt and massive accounting fraud, marking one of the most significant corporate failures in history. Following years of restructuring, the French multinational Lactalis acquired the distressed assets in 2011 and secured full global control by 2019. Today, the revived entity operates nearly 140 production centers across six continents, employing roughly 16,000 people while sourcing milk from thousands of Italian farms.

Recent years have seen a strategic push into new markets, including a nationwide distribution deal with Target in the United States as of late 2025. The brand continues to diversify its portfolio beyond UHT milk to include yogurt, cheese, butter, and fruit juices under sub-brands like Santal and Malù. While legal proceedings regarding the original scandal continue in Italy, with recent court rulings in 2026 reopening discussions on shareholder good faith, the current operation stands as a stable leader in the global dairy sector.
