What is clear is that the chain originated in France, where the "French taco" itself was invented as a local adaptation of Mexican cuisine. The dish combines a flour tortilla with fries, meat, and cheese sauce, then presses and grills the whole thing until crispy. It quickly became a phenomenon among students and late-night diners.

    From its first shop, O'Tacos expanded through franchising, and by the late 2010s it had hundreds of locations across France. In 2017, the brand made its first move into the United States, opening a store in Crown Heights, Brooklyn, New York. That location drew attention for its massive 5-pound "Gigatacos," but it closed after about six months. The U.S. expansion struggled overall, and the Brooklyn outlet shut down by 2021. Undeterred, O'Tacos looked to other markets. In 2022, it launched in Italy with a first outlet in Rome. A year later, in April 2023, the company announced a Canadian expansion in partnership with QSRP and Foodtastic, with plans for 50 stores.
