Actually the boilerplate for turning messy PDFs into structured JSON is finally gone. Unstract is an open-source platform that just hit over 7,000 stars on GitHub and it lets you define extraction requirements using natural language instead of writing regex or rebuilding templates for every format change. It processes invoices, bank statements, financial reports, insurance documents, forms, and scanned PDFs without breaking a sweat. Developers can use a Studio interface to test prompts and define schemas before deploying extraction capabilities as a REST API or an ETL pipeline.
